In the USA and some other odd countries, they remove the natural coating of the eggs from washing it to combat salmonella, so you need to keep it refrigerated and have no choice.

Eggs aren't refrigerated in nature for obvious reasons. They are naturally protected for a good amount of time (I think it was about 2 weeks or more shelf life). Refrigerating increases the shelf life thou. However, lot of places in the world refrigerating eggs would rise the cost unnecessarily.
